How hard is it to obtain 501c3 status? If I file articles for a non-profit organization in my state, is that enough?

articles are filed with the state. You will need a letter from the IRS stating that the entity is a non-profit under internal revenue code section 501c3 or a corresponding section.

The IRS application is lengthy and will take 3-6 months to get approval.

Tell me if I am wrong, but don't you need a business plan for a 501 designation? how detailed does that really need to be is what I don't understand?
